Hello Austin! We are so excited about a collaboration we have going right now with The Vegan Nom, Austin’s premiere vegan taco truck. Some of you may remember (OK. Maybe not.) me meeting owner, Chris Rios, at Vida Vegan Con back in May. I could tell just from talking to him that his tacos were good. But then I kept hearing buzz about them all around town. So I knew they were onto something.
Well anyway, as luck would have it, we ended up with a little bit of extra cheese finally about a week or so ago, and I convinced Chris that he should make a taco with it. So right now and for a limited time, The Vegan Nom is offering a special taco featuring our smoked cashew cheese! OMG. This taco looks so AMAZING. I really wish I was in Austin right now. Because I would be eating this taco….a bunch of these tacos…every day this week. This taco is right up my alley. It’s even gluten-free!
The Local Tex Mex Taco! He says it will be available til the end of the month. It features grilled enchilada style corn tortillas, carmelized onions and peppers, fresh onions, alfalfa sprouts, and The Vegan Nom‘s special Tex Mex gravy. Chris says their Tex Mex gravy and our smoked cheese pairs really well together. ‘Like no other.’ I like the sound of that. I want this taco SO MUCH. I hope I’ll get to eat one next time I’m down that way. So far, it seems like people are responding really positively to our little collaboration. So if you if you’re in Austin, you should make your way over there and get one.
I’m not sure if they actually have these cookies right now. But how cute are they? Ginger Dead Men. I had to post this for our partner, Heidi, in Seattle. Heidi is the keyboard player in a Zappa inspired punk band called the Sugar Skulls. She is gonna freak over the Ginger Dead Men.
Thanks for the awesome tacos, Chris! Julie and I have been seriously drooling over that taco. It’s like a taco that we can actually eat. Gluten Free and Vegan tacos that are blowing my mind. You guys are playing my song. Plus, authentic Tex Mex flavors? Seriously. I mean, I grew up in Texas. How much better does it get?
